TIP: when you talk to them they give you hints of what they like. The mayor will tell you that he like potatoes au gratin. (he also like just getting a potato)
All of the animals love to be picked up (except the dolphin, of course) but they also love food. Once they like you, some of them will come and sing to you first thing in the morning.
bunny: carrots, apples and other fruits and vegetables
monkey: fruits and vegetables, fish, brown mushrooms
cat: fish, milk
sparrow: bird feed (chicken feed), grapes, apple, corn
cukoo: same as the sparrow
squirrel: chestnuts, fruit and some vegetables
dolphin: fish, waving/riding

weasle: fish, and some fruits and vegetables

: I haven't finished the game, I'm not even done with my first year! I know that if you want to befriend Jamie give him/her oranges, he LOVES oranges. Give Ann Gold, or Silver ores, don't give her rare ores though! Kurt likes ores, and wood stuff. Alex likes herbs. Nina likes flowers. Katie loves honey. And I know that the monkey likes blue berries, the bunny likes weeds, the whale likes fish, so pretty much give people and animals gifts! Experiment with it!
