If you master an entire set of materia i.e. command, magic or summon, which takes a very long time, then you can get a master materia for that type. you could also try your luck with emerald weapon and then you get all three types for defeating it and giving the earth harp to a man in the western most building in kalm, upstairs.
Master 1 of every magic,summon or command materia and go to Cosmo Canyon observatory where bugenhaden holds your huge materia and you will exchange them for the respective "master" materias. As stated you can also kill emerald weapon and trade the earth harp in kalm for 1 of each.

It varies but they will not stop attacking until at least 30-50 times

If you do have a Max HP of 7777 then your characters do start taking off 7777 but you keep control of them as normal and they only attack as normal but if you have a limit like Highwind, Omnislash or similar then all them attacks will take off 7777
