You make sure that you have a tough ship, I personaly go for a galleon before I annex a town, also, if you make a run then fire when possible, you will gradually destroy the cannons then eventually capture the town, to get a galleon, I go for around the french citys, they seem to have more galleons around there than anywhere else
A2:
Multiple ships. when your first gets close to sinking just run away and resume with another ship. the health on the turrets will be the same, i've used 5 brigs and got through a 6 cannon town this way
